I came across this tonight on Pinterest tonight and found myself talking out loud to my own mother who has passed, asking her why did she not do something like this and leave me some instructions . The Bat House in Gainesville, Florida located off of Museum Road and across from Lake Alice is a must see if you have children.  Each night, just after dusk  over 60,000 bats fly out from the house in search of mosquitoes to feed upon all night long. I will warn you that if down wind the smell is pretty horrendous. Comparable in stench to the Giraffes at Silver Springs if you remember those days. Swarming the sky in batches of thousands and thousands they are hard to miss! Find out before heading there what time sunset is and get there around 30 minutes before to ensure a good spot in the audience or to catch the occasional bat or two that succumbs to the Hawks that sit and wait for them to make their nightly appearance.

If time permits during your visit, head first across the road to Lake Alice. We spied an alligator on this particular visit and are rarely disappointed in sighting one each time we go. There is plenty of educational information posted and PLEASE DO NOT feed the alligators. However, if you are a native then you already knew that. On this particular visit I was unable to capture when the bats flew out due to a lightening and rain storm that caused us to leave early.

Ingredients:
Brown rice tortillas (or any other that you have on hand)

Pecorino Romano (or cheese of your choice)

Fresh basil

Garlic cloves (2 per pizza)

1 tbsp olive oil per pizza
Directions:

Preheat oven to 425 degrees.  Spread 1 tbsp. olive oil on each tortilla, add garlic cloves then top with your cheese of choice and any toppings. Heat just enough to melt the cheese. Cooks about 8-10 minutes depending on the oven. You can also throw these on the grill to heat them! Super easy and you can have pizza any time!

PUBLIX | One of the things I LOVE about Publix is their labels. You may not even notice them, but if you’re searching they are wonderful.

You’ll find these items mixed in all over the store and sometimes you’ll be lucky and find a section with organic food and they’ll be grouped together.

This one is a no-brainer, they advertise over 3,000 items that are gluten free and have a great staff to answer questions.

TRADER JOES | (3724 SW Archer Rd Gainesville, FL 32608) *this is located in Gainesville, but is right off the first exit and definitely worth listing
They carry their own brand of gluten free flour and a lot of gluten free products that are hard to find in Ocala at a reasonable price. This store has quickly become one of my favorites, but be sure to bring a cooler with you to bring home your goodies.
